Boursin Stuffed Chicken

  • 4 Chicken Breasts
  • 8 Slices Serrano Ham
  • Boursin (or other garlic and herb soft cheese)
  1. Slice a chicken breast lengthways, so you go about 3/4s through the chicken but not completely, creating a little pocket
  2. Fill generously with cheese
  3. Wrap the chicken with some serrano ham- you will need 2 slices. Repeat with the remaining chicken breasts.
  4. Bake for 25-30 minutes at 180C Fan/200C, or until the chicken is cooked through.

Additional Information

I recommend serving this with herby potatoes and lemon & garlic Cavolo Nero. For weaning infants and small children you may prefer to avoid the ham to reduce the salt content of the dish.
