Ratatouille

Make this classic French dish for an easy, healthy dinner. This is perfect for batch cooking and freezing small portions too. If you would like to serve with a protein source, turkey steaks, chicken breast, and grilled halloumi all work well with this. Feel free to play around with the proportions of courgette, aubergine and peppers too- sometimes I use more peppers, or different colours, etc.

- 1 White Onion
- 1 or 2 Cloves Garlic
- 1tbsp Olive Oil
- 1 Large Aubergine
- 2 Small Courgettes, or 1 Large
- 1 Red Pepper
- 2x 400gTins Tomatoes
- 1tbsp Balsamic Vinegar
- 2 Tsp Mixed Herbs
- Dice the onion and crush the garlic. In a large frying pan, add the oil, garlic and onion and lightly fry until the garlic is soft. Meanwhile, chop the aubergine, pepper and courgette into bitesize pieces (or smaller if you prefer for weaning).
- Add the remaining ingredients to a pan. Fill one of the tins of tomatoes halfway with water and add that too. Bring the mix to a boil, then pop a lid on and simmer for 30-40 minutes (until the veggies are soft and the sauce has thickened slightly.
- Serve with pasta or rice, or even in a baked potato.

Additional Information
If you would like to make this in the slower cooker, leave out one tin of tomatoes, but still use half a tin of water. Cook for 4-6 hours.
