Zingy Red Cabbage Coleslaw

This is the perfect, cost effective side dish for you to make for BBQs, lunches, and buffets. I love making this with my kids at cooking club too- it's a great way to chop more resistive veggies, or smaller kids can post the veg through the food processor spout!

- 1/2 small red cabbage
- 1-2 carrots (aim for about equal amount as the cabbage)
- 1-2 tbsp mayonaise
- 1tsp Wholegrain Mustard
- 1 Lime, juice only
- Finely shred the cabbage and grate the carrot- you can do this by hand, or, my preferred option, using the attachments on a food processor.
- Mix all of the ingredients together and serve.

Additional Information
Because cabbages vary in size, you may find you need a little more or less mayonnaise and mustard each time you make this- just adjust as needed and to taste.
