BBQ Ginger & Lime Chicken

This sticky, mildly spiced chicken is the perfect BBQ dish this summer! This is not suitable for children under 1 due to the honey, but otherwise it is a great addition to any family BBQ and leftovers go great in sandwiches and salads the next day. This is a great introduction to some mild spicess, and is vaguely thai-inspired in flavour.

- 1.2kg Chicken (I use chicken thigh fillets- you should have approx 10 pieces)
- 2 Limes
- 1 Large Lump of Fresh Ginger- roughly 50g
- 4 Cloves Garlic
- 4 Spring Onions
- 3 Tbsp Honey
- 2 Tbsp Dark Soy Sauce
- 2 Tbsp Fish Sauce
- 1 Tsp Chilli Flakes (or more to taste)
- Start by making the marinade. Peel and grate the ginger and garlicand place in a tub (which has a lid and is large enough to fit the chicken too). Finely dice the spring onions and add those too. Grate the lime zest, add this, and then squeeze in the juice of the limes too. Finally add in the honey, soy sauce, fish sauce and chilli flakes. Give it all a good stir.
- Add in the chicken to the marinade, and give it a good mix with your hands. Pop the lid on the tub and refrigerate for a minimum of one hour, but preferably overnight.
- When you are ready to cook, fire up the BBQ (or grill) and remove the chicken from the marinade, and cook evenly on each side until cooked through (if in doubt cut in half (or at the thickest point). Enjoy!
