Leek & Fennel Cabbage

Cabbage was never a vegetable I was keen on as a kid- often overcooked and tastless- boring, to be honest! However, the leeks and fennel really give this dish a real oomph factor- perfect as a side for any roast dinner- and one I cannot get enough of!

Ready In: 25 Mins

  • 1 leek
  • 1 clove garlic
  • 1 tsp fennel seeds
  • Half a head of savoy cabbage
  • 200ml vegetable or chicken stock
  • Generous glug of sherry or cider vinegar
  1. Finely slice the leek into half moons, or dice if you prefer. Crush the garlic claove.
  2. Add the leek to a sautee pan (with lid) with a glug of olive oil, the garlic and fennel seed. Sautee for roughly 5 minutes, until softened
  3. Meanwhile shred half a head of shredded savoy cabbage.
  4. Add the cabbage, stock and a generous glug of sherry vinegar to the pan and pop a lid on for 10-15 minutes stirring occasionally.
  5. After this time, most of the liquid should be gone, but if not, take the lid off for a few minutes and conitnue to cook. Your cabbage should be soft but not soggy. Serve as a side dish.

Additional Information

If serving this to weaning infants you may want to use a low salt stock cube, and finely shred the cabbage. Babies may find it easier to eat when mix with some mashed potato.
